Ugo Perret-Gallix

Ugo is a young chef who arrived in Japan in 2016 to Kikunoi Kyoto, and moved to Tokyo to work for 6-years with Lionel Beccat of L'Esquisse a two star Michelin.

 

Kibun is his journey, a story of his vision and a dream to create a passage of his daily visits 

to Toyosu market, were he goes each morning.

The cuisine is defined as ultra, the focus is on product and purity and thorough a detailed process we define ourselves.
